With great elegance, great minerality and great persistence, this wine reveals an attractive salinity at the finish. It will go well with a salmis of guinea fowl and Lautrec garlic croutons, or a roast suckling pig and its soy-laced juices, a fillet of beef with a beetroot reduction, or duck breast with black currants.
